I used a wily cat for catching the hell-rats. You can get wily cats after doing the ratcatchers quest, and according to wiki they have a 93% rat catching chance. I tested stews on Dave with only 1 color of spice. First I used 1 dose of spice, then 2 doses, and if that failed, I knew I needed 3 doses of that spice.
